Asian-Style Marinated Fried Chicken Thighs

Ingredients:

  • 450 g skinless and boneless chicken thighs, cut into 12 strips 9-10 cm long.
  • 1/4 cup cilantro leaves
  • 1/4 cup vegetable oil
  • 1 tablespoon Asian hot chili sauce, such as Sriracha
  • 1 tbsp. l. brown sugar
  • 2 teaspoons soy sauce
  • 1-2 cloves of garlic
  • 1 piece of ginger root (about 5 cm), peeled and coarsely chopped
  • 1 small onion, coarsely chopped
  • Innings: 0.5 cups prepared dipping sauce, such as cilantro chutney, sweet chili sauce, or ponzu
  • Special equipment: 12 wooden skewers, 15 cm long, soak in water for 30 minutes.

Preparation:

  1. Combine cilantro, vegetable oil, chili sauce, sugar, soy sauce, garlic, ginger, onion and 1/2 teaspoon salt in a food processor or blender and process until smooth.
  2. Remove the skewers from the water and thread a piece of chicken onto each. Place the skewers in a large, non-reactive baking dish and coat them with the marinade. Cover and marinate in the refrigerator for 1-2 hours.
  3. Preheat a grill or grill pan over medium-high heat. Remove the skewers from the baking dish and discard the marinade. Grill the chicken for 4-6 minutes per side until well-browned and cooked through. Serve with your choice of sauce.
