Ingredients:
- 8 ears of corn, soaked in cold water for 30 minutes, remove silks, leave husks on
- Rapeseed oil
- 1/4 cup sour cream (15-25% fat)
- Juice of 2 limes and zest of 1 lime
- 1 tbsp ground ancho pepper
- 1/4 cup chopped fresh cilantro leaves
- 1/4 tbsp. grated cotija cheese
Preparation:
- Preheat the grill to high heat. Grill the cobs for about 10 minutes on all sides, until lightly charred. Remove the cobs from the grill and trim the kernels with a sharp knife. Meanwhile, place a cast-iron skillet on the grill.
- Add the corn and remaining ingredients to a hot skillet and cook, stirring occasionally, until tender. Serve the salad with the steak.
