BBQ Chicken Pizza topcook.tomathouse.com
Ingredients:
- 1 teaspoon olive oil, plus more for greasing
- 250 g ready-made pizza dough, room temperature (For the pizza dough recipe, see here.)
- 1/3 cup and 2 tablespoons dark barbecue sauce (See barbecue sauce recipes here)
- 250 g skinless chicken breast fillet
- Salt and freshly ground pepper
- 2/3 tbsp. (90 g) grated smoked gouda cheese
- 2/3 tbsp. (90 g) grated mozzarella cheese
- 1/2 small red onion, thinly sliced
- Fresh coriander leaves, for sprinkling
Preparation:
- Place the baking tray in the top part of the oven and heat at 220°C for 30 minutes.
- Grease parchment paper with olive oil. Place the dough on the parchment paper and shape it into a 25 cm (10 in) round with your hands. Brush the dough with olive oil and cover with another sheet of parchment paper. Let the dough rise for 30 minutes.
- In a small bowl, combine 2 tablespoons barbecue sauce and 1 teaspoon olive oil. Place the chicken breasts in a baking dish, season with salt and pepper, and rub with the barbecue sauce mixture. Bake the chicken breasts in the middle of the oven for 20 minutes. Cool, then cut into cubes.
- Unfold the dough and spread 1/3 cup barbecue sauce, leaving a 2-cm border on each side. Top with layers of chicken, Gouda, mozzarella, and red onion. Transfer the pizza, along with the parchment paper, to a hot baking sheet and bake until the cheese is melted and the crust is golden brown, 20 to 25 minutes. Sprinkle the pizza with cilantro leaves.
