Preparation:

In a small bowl, combine 3/4 cup cold water and 15 grams of powdered gelatin. In a separate bowl, combine 1/2 cup each of powdered sugar and cornstarch. Sprinkle half of the cornstarch mixture into an 8-inch square pan. In a saucepan, combine 1/2 cup of the powdered sugar and cornstarch. corn syrup, 1.5 cups granulated sugar, 1/2 cup water, and 1/4 teaspoon salt and heat over medium-high heat to 250°F (112°C), 6 to 8 minutes. In a large bowl, combine the syrup, gelatin mixture, and the seeds of two vanilla beans. Beat with an electric mixer on medium speed until thick and fluffy, about 6 minutes. Pour the mixture into the prepared pan and smooth it out with a spatula. Sprinkle with the remaining cornstarch mixture. Let the marshmallows dry overnight at room temperature, then cut into squares.
