Ingredients:
- 1/2 cup orange marmalade
- 1/2 cup sugar
- 8 large oranges
- 1.5 cups champagne or white sparkling wine
- 1/3 cup toasted almonds
- A sprig of fresh mint
Preparation:
- Combine the jam and sugar in a small saucepan. Mix well, place over low heat, and cook, stirring, until the sugar dissolves.
- Peel the oranges, slice them, and then quarter each piece, removing the white veins from the center. Place in a medium bowl.
- Pour the sugar-jam mixture and champagne into the bowl with the oranges. Refrigerate for 8 hours.
- Sprinkle with almonds before serving and garnish with a sprig of mint.
