Jamie Oliver's Homemade Ginger Beer

Ingredients:

  • 150 g fresh ginger
  • 4 tbsp. l. muscovado sugar
  • 2 - 3 lemons
  • 1 liter of sparkling water or carbonated mineral water
  • Sprigs of fresh mint

Preparation:

  1. Grate the ginger coarsely; you can leave the peel on if you prefer. Place the ginger and any juices in a bowl and add the muscovado sugar.

    Using a vegetable peeler, remove the zest from 2 lemons, add to the bowl and pulse with a pestle for 10 seconds to release the essential oils and combine the flavors.
  2. Squeeze the juice from 3 lemons and add to a bowl. Pour in the sparkling water.

    Let it steep for 10 minutes, then taste. Adjust the acidity by adding more sugar or lemons.

    Strain the ginger beer through a sieve into a large pitcher and add plenty of ice and a few sprigs of mint.
