Preparation:

Cook 1 kg peeled and sliced ​​potatoes in boiling salted water until tender, about 5 minutes; drain. Add 1/4 cup olive oil, 1 tablespoon chopped rosemary, 1 teaspoon salt, and a few grinds of pepper. Bake on a preheated baking sheet at 250°C (400°F) until crisp, stirring halfway through, about 40 minutes. Sprinkle with salt and serve with garlic mayonnaise.
