Soba noodles with mint dressing topcook.tomathouse.com
Ingredients:
- 340 g dry soba noodles (Japanese buckwheat noodles)
- 225 g cauliflower florets
- 1/3 tbsp. rice vinegar
- 2 tablespoons of vegetable oil
- 1 tbsp soy sauce
- 1 and 1/4 teaspoons sugar
- 3/4 tsp salt
- 1/2 cup chopped fresh mint
- 1.5 cups thinly sliced green onions (1.5 bunches)
Preparation:
- In a large pot of boiling water, cook the noodles until tender, about 5 minutes, then drain in a colander. Rinse with cold water to stop the cooking process and drain well.
- Heat a tablespoon of oil in a frying pan and fry the cauliflower. Cool.
After the noodles have rested, prepare the dressing: combine vinegar, a tablespoon of the remaining oil, soy sauce, sugar, and salt, and stir until the sugar dissolves. Toss the noodles with the cabbage, dressing, mint, and green onions.
