topcook.tomathouse.com

Ingredients:

  • 4 green apples
  • 1 red bell pepper, cored and diced
  • 1 - 2 serrano chili peppers, diced and seeded
  • 2 tablespoons of vegetable oil
  • 1 tsp. mustard seeds
  • 1 diced onion
  • 1 teaspoon of salt
  • 2 tsp. pureed garlic
  • 1 teaspoon ground ginger
  • 1 teaspoon ground allspice
  • 1/4 cup raisins
  • 1 cup brown sugar
  • 3/4 cup red wine vinegar
  • 1 cup of water

Preparation:

  1. Peel the apples and cut them into quarters. Remove the core and chop coarsely.

Heat the oil in a large saucepan over high heat. Add the mustard seeds, cover, and cook until the spices stop sizzling. Reduce the heat and add the onion, red bell pepper, and salt. Cook, uncovered, stirring occasionally, until the onion is translucent. Add the garlic, serrano chili, ginger, and allspice and cook for another minute.

Add the remaining ingredients, including the apples. Cook, uncovered, over medium heat until the mixture is soft and fragrant, about 40 minutes. Cool before serving.
