Asian-Style Steamed Fish topcook.tomathouse.com
Ingredients:
- 1 - 1.2 kg of fish fillet (cod or halibut)
- 1 jalapeño pepper, seeded and cut into strips
- 1 red bell pepper
- 5 green onions, cut into large sticks
- 1 root (5 cm) ginger, peeled and cut into fine strips
- Salt and freshly ground pepper
- 2 tablespoons soy sauce
- 3 tbsp cold-pressed nut oil
- 3 cloves garlic, chopped
- 1/2 teaspoon sugar
- Cooked long grain rice, for garnish
Preparation:
- Salt the fish: Rinse the fish fillets under cold water and pat dry. Season the fish with 1 teaspoon of salt and a little pepper. Place half the fish fillets in a single layer in a glass or ceramic ovenproof dish, top with half the green onions and ginger, and cover with the remaining fish fillets. Drizzle with 1 tablespoon of soy sauce and refrigerate for 30 minutes.
- To steam the fish: Place the fish in a steamer and cover with a lid. Bring the water to a boil and cook the fish for 15-20 minutes. Transfer the fish to a serving dish and pour the juices over it.
- Prepare the sauce: Heat the nut oil in a frying pan. Add the remaining ginger, garlic, jalapeño pepper, sugar, and 1/2 teaspoon salt. Cook for 30 seconds over high heat, stirring constantly. Add 1 tablespoon of soy sauce and remove from the heat.
- Slice the remaining green onions and bell pepper into strips, sprinkle them over the fish, and pour the sauce over them. Place the fish on a plate with rice.
