BBQ chicken wings in lime and tequila sauce topcook.tomathouse.com
Ingredients:
Chicken wings
- 450 g chicken wings, cut in half (discard the tips)
- 1 tbsp. salt
- 1 tbsp freshly ground black pepper
- Lime wedges for serving
Tequila and Lime Sauce
- 0.5 cup lime juice
- 1/4 cup tequila
- 1 tbsp. l. agave syrup
- 1 teaspoon lime zest
- 1 tsp ground cumin
- 1 tsp. adobo sauce
- 0.5 tbsp freshly ground black pepper
- 0.5 tsp salt
Preparation:
- Preheat oven to 175°C.
- Season the wings with salt and pepper. Place them on a baking sheet in a single layer. Place in the oven and bake for 45 minutes. Remove the wings from the oven, transfer them to a bowl, and let them cool. Cover and refrigerate until ready to fry.
- Tequila Lime Sauce:
Combine all ingredients in a 4-quart zip-lock plastic bag and stir well.
- Preheat grill to 350°F (175°C) for indirect heat.
- Place the wings on the grill grate and grill for 10-15 minutes over the coals until hot and grill marks appear, turning them over after 7 minutes. Remove the wings from the grill to a serving bowl.
- Add the wings to the tequila lime sauce and toss to coat evenly and serve with lime wedges.
