Ingredients:
- 2 tbsp. l. olive oil
- 2 tablespoons butter
- 4 chicken breast fillets (about 900 g)
- Salt and freshly ground black pepper
- Half a Vidalia onion, finely chopped
- 1 Granny Smith apple, cut into 1/4-inch thick slices, cored
- 3 cloves garlic, crushed
- 2 tsp dried thyme
- 2 bay leaves
- 2 tbsp. flour
- 1.5 cups non-alcoholic apple cider
Preparation:
- Heat 2 tablespoons of vegetable oil and 1 tablespoon of butter in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, add them to the skillet, and cook until golden brown, about 4 minutes per side.
- Remove the chicken from the pan and set aside. Add the remaining butter and the onion, apple, garlic, thyme, and bay leaf. Cook until the apple begins to brown and the onion is soft, about 6 minutes. Add the flour and stir for 2–3 minutes.
- Return the chicken breasts to the pan, add the cider, bring to a boil, reduce heat, and cover. Simmer until the chicken is cooked through, about 12 minutes.
