Fried goat cheese in tomato sauce topcook.tomathouse.com
Ingredients:
- 1 tbsp. l. olive oil
- 2 cloves garlic, crushed
- 1 medium onion, diced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- A pinch of red pepper flakes
- 1 cup dry white wine
- 1 can (400g) diced tomatoes with basil, garlic and oregano
- 1 can (280 g) canned roasted sweet peppers, diced
- One block (240 g) of fresh goat cheese, cut into 8 slices 2.5 cm thick.
- 1 tbsp chopped fresh parsley
- Zest of 1 lemon
- Crostini and crackers for serving
- Coarse salt and freshly ground black pepper
Preparation:
- In a 10-inch ovenproof skillet, combine the olive oil, garlic, and onion. Cook over high heat, stirring, for 1 minute. Add the paprika, Italian seasoning, and red pepper flakes and cook, stirring, until the onion begins to soften, 3 to 5 minutes.
- Pour in the wine and simmer, stirring, for about 1 minute.
- Add tomatoes, roasted peppers and a pinch of salt and black pepper.
- Cook, stirring, until the liquid has evaporated, 8 to 10 minutes.
- Meanwhile, preheat the oven to grill mode.
- Place goat cheese slices over the tomato mixture, pressing them lightly into the sauce.
- Grill until cheese is deep golden brown, 2 to 4 minutes.
- Sprinkle with parsley and lemon zest. Serve hot with crostini and crackers for dipping.
