Nutty Fortune Cookies

Ingredients:

  • 1 egg white
  • 1 teaspoon hazelnut extract
  • 30 g of hazelnut paste
  • 1/4 cup sugar
  • 1/4 cup premium flour, sifted
  • 3 tablespoons butter, melted but cooled
  • 1 cup melted chocolate
  • 0.5 cup chopped hazelnuts

Preparation:

  1. Preheat oven to 190°C.
  2. Lightly whisk together the egg white, hazelnut extract, nut butter, and sugar in a bowl. Mix in the sifted flour until smooth. Add the butter.
  3. Spoon 2 teaspoons of dough onto a baking sheet lined with a silicone mat and spread into an 8 cm circle. Bake for about 5 minutes, until the edges are browned. Remove the cookies from the oven.
  4. Working with one cookie at a time, place a note in the center. Fold the cookie in half, with the cut side facing out. Then, shape the cookie into a round shape by folding it in half so the ends point down. You can place the cookies on the edge of the bowl. The cookies will become crispy when cooled..
  5. When the cookies have cooled, brush the seam with melted chocolate and roll in chopped nuts.
