Ingredients:
- 2 cups chicken broth
- 1.5 cups quick-cooking couscous
- 1 cup seedless grapes
- 0.5 cups pine nuts or almonds
- 0.5 cups chopped dried apricots
- 0.5 cup chopped green onions
- 1/4 cup chopped fresh parsley
- 1/8 cup chopped fresh mint
- 1 teaspoon of salt
- 0.5 tsp ground black pepper
- 0.5 tsp cinnamon
- 1/4 tsp cayenne pepper
- 0.5 cups olive oil
- 0.5 cup lemon juice
Preparation:
- In a medium saucepan, bring the broth to a boil and add the couscous. Remove from the heat and cover.
- Let the couscous sit to steam, then fluff with a fork and transfer to a large bowl.
- Add grapes, pine nuts, dried apricots, green onions, parsley, and mint. Add the remaining ingredients and let sit for 30 minutes before serving.
