Ingredients:
- 3 tablespoons freshly squeezed lemon juice
- 3 tbsp. l. olive oil
- 2 tablespoons chopped fresh Italian parsley
- 1 tbsp. honey, for example, mixed herbs
- 1 teaspoon coarse salt
- 1 large jicama (450-700 g), peeled and cut into thin strips
- 1 large carrot, peeled and cut into thin strips
- 1 Honeycrisp apple, thinly sliced
- 1/4 cup toasted sesame seeds
Preparation:
- In a large bowl, combine lemon juice, olive oil, parsley, honey, and salt. Add jicama, carrots, apple, and sesame seeds.
- Toss well to coat everything with the dressing. Let the salad sit at room temperature for 30 minutes to allow the flavors to meld and the vegetables to soften slightly. Serve.
