Stuffed Shishito Peppers

Ingredients:

  • 200 g shishito peppers
  • 100 gr. grated manchego cheese (about 1 cup)
  • 170 g thin slices of Serrano ham

Preparation:

  1. Preheat oven to 230°C.
  2. Make a 3-4 cm slit lengthwise in each pepper. Fill the peppers with cheese. Wrap each stuffed pepper with a small slice of ham.
  3. Place the peppers on a parchment-lined baking sheet. Bake until the ham is golden brown and the cheese is melted, 15-20 minutes.
