Hot caramel sauce

Ingredients:

  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon coarse salt
  • 1 cup of sugar
  • 1 tbsp Sriracha hot sauce

Preparation:

  1. Combine butter, corn syrup and salt in a small saucepan and bring to a boil over medium heat.
  2. Add the heavy cream. Once the sauce begins to bubble, remove it from the heat and set aside.
  3. Sprinkle the sugar evenly over the bottom of a large skillet and heat over medium heat. Cook, without stirring, until the sugar melts and begins to caramelize, about 5 minutes. Continue cooking, swirling the pan (but not stirring), until the caramel turns a deep amber color, 3 to 5 minutes.
  4. Remove the pan from the heat and quickly pour the warm cream mixture into the caramel, stirring until smooth.
  5. Stir the Sriracha sauce into the caramel sauce, then pour the sauce into a small serving bowl and let cool and thicken.
  6. Whisk and let the sauce cool.
