Whole grain scones with green onions and Parmesan topcook.tomathouse.com
Ingredients:
- 1 tbsp. + 2 tbsp. (120 g) whole grain wheat flour
- 1.5 cups (180 g) premium flour
- 1 tbsp + 0.5 tsp baking powder
- 1 tbsp. sugar
- 0.5 tsp salt
- 65 g chilled unsalted butter, diced
- 1/3 cup chopped green onions, green part only (about 2 greens)
- 1/3 tbsp. (15 g) grated parmesan
- 1 tbsp chopped fresh thyme leaves
- 1 large egg
- 1 cup of 2% milk
Preparation:
- Preheat oven to 200°C. Line a large baking sheet with parchment paper and sprinkle with 1 cup whole-wheat flour. Set aside.
- In a large bowl, combine the all-purpose flour, baking powder, sugar, salt, and 1 cup of whole-wheat flour with a fork. Using a pastry blender or your fingertips, rub the butter into the flour mixture until it resembles coarse sand with pea-sized pieces of butter. Add the onion, cheese, and thyme and mix gently.
- In a small bowl, combine the milk and egg; add to the flour mixture and gently fold with a wooden spoon, being careful not to overmix. The dough will be sticky.
- Place the dough on the prepared baking sheet. Sprinkle with the remaining whole-wheat flour. Spray a serrated knife with cooking spray and cut the dough in half. Form into two 150g (5 oz) circles. Cut each circle with a knife into 6 wedges.
- Bake for 20-25 minutes. Cut each circle into 6 wedges along the marked lines and serve.
