Ingredients:
- 3/4 cup mayonnaise

- 1/4 cup grainy mustard
- 1.5 tsp dried Italian seasoning
- 0.5 tsp cayenne pepper

- 4 cups cold breaded fried chicken, cut into large cubes (5-8 pieces of breasts and thighs)
- 1/4 cup chopped fresh parsley
- 3 stalks celery, diced
- 3 green onions, thinly sliced
- 4 sliced croissants
Preparation:
- In a large bowl, combine mayonnaise, buttermilk, mustard, Italian seasoning, cayenne pepper, and lemon juice.
- Add the chicken, parsley, celery, and green onions and toss to coat. Season with salt and pepper. Let the chicken salad sit for 30 minutes to allow the flavors to meld. Divide the salad among the croissants and serve.
