Triple Chocolate Cookies

Ingredients:

  • 1/4 cup softened butter
  • 0.5 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup canola oil
  • 1 egg
  • 1 tsp vanilla extract
  • 0.5 cups premium flour
  • 0.5 cup whole grain flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt or less
  • 1/3 cup dark chocolate (60 g), coarsely chopped
  • 1/3 cup milk chocolate (60 g), coarsely chopped
  • 2/3 cup chopped pecans, optional

Preparation:

  1. Preheat oven to 175°C.
  2. In a large bowl, cream the butter and sugar with a fork until smooth. Add the butter and egg and mix until smooth. Stir in the vanilla.
  3. In a medium bowl, combine flour, cocoa powder, and salt. Add the dry ingredients to the butter mixture and mix well.
  4. Add the dark chocolate, milk chocolate, and nuts and mix well. Drop 1 tablespoon of the batter onto an ungreased baking sheet. Bake for 12 minutes. Transfer the cookies to a wire rack and let them cool completely.
