Stir-fry with mushrooms in ginger sauce topcook.tomathouse.com
Ingredients:
- 1 tbsp ketchup
- 1 tbsp. mayonnaise
- 1 teaspoon peeled and finely grated ginger root
- 1 tsp. dark sesame oil
- 1 teaspoon soy sauce
- 1 teaspoon white vinegar
- 2 tablespoons of vegetable oil
- 2 cloves garlic, crushed
- 450 g brown mushrooms, cut into 4 pieces
- 110 g shiitake mushrooms
- Chopped fresh cilantro, for serving
Preparation:
- In a small bowl, combine ketchup, mayonnaise, ginger, sesame oil, soy sauce, vinegar, and 1 tablespoon of water. Set aside.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the garlic and sauté for 30 seconds. Add the mushrooms and shiitake mushrooms and 2 tablespoons of water. Cook, stirring, until the mushrooms are soft and golden, 7-8 minutes. Add the ketchup mixture and toss to coat. Transfer the mushrooms to a serving platter and garnish with chopped fresh cilantro.
