topcook.tomathouse.com

Ingredients:

    Sandwich

  • 2 slices sourdough bread
  • 2 tablespoons mayonnaise
  • 1 tbsp. cheese spread with jalapeño and pimento

    Jalapeño Pimento Cheese Spread

  • 110 g softened cream cheese
  • 0.5 cup mayonnaise
  • 2 tablespoons adobo sauce from a jar of chipotle peppers
  • 1 tbsp Dijon mustard
  • 0.5 tsp freshly ground black pepper
  • A pinch of cayenne pepper or a little hot sauce
  • A pinch of coarse salt
  • 2 cups grated sharp cheddar
  • 2 tbsp. grated smoked gouda
  • 110 g chopped pimento pepper
  • 1/2 cup pickled jalapeño rings, finely chopped
  • 2 tsp chopped fresh dill
  • Crackers for serving
  • 1 cup Castelvetrano olives, for serving

Preparation:

  1. Heat a nonstick skillet over medium heat. Spread 1 tablespoon of mayonnaise on each slice of bread. Place one slice of bread, mayonnaise side down, in the skillet. Top with the jalapeño-pimento cheese spread.
  2. Place the second slice of bread, mayonnaise side up, on top of the cheese. Press the pieces together with a spatula and fry until golden brown, about 2 minutes per side. Slice and serve as an appetizer with crackers and olives.

    Jalapeño Pimento Cheese Spread:
Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne pepper or hot sauce, and salt in the bowl of a food processor. Blend until smooth. Add most of the Cheddar and Gouda, reserving about 2 tablespoons of each, and blend again until smooth. Add the mixture to the remaining cheese and fold with a spatula. Stir in the pimento, jalapeño, and dill, and refrigerate before serving.
