Quick Pickled Red Onions

Ingredients:

  • 1 medium red onion, thinly sliced ​​into half rings (about 2 cups)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons firmly packed light brown sugar
  • 0.5 tsp crushed coriander seeds

Preparation:

  1. Place the onion in a medium bowl. Combine the vinegar, sugar, coriander, 2 tablespoons of salt, and a few grinds of black pepper in a small saucepan and bring to a boil over medium heat. Cook until the sugar dissolves, about 1 minute.
  2. Pour the mixture over the onions, cover and set aside to cool to room temperature.
