Overnight chocolate pudding with chia seeds

Ingredients:

  • 2 and 1/4 cups milk
  • 100 g dark chocolate, finely chopped
  • 1/4 cup cocoa powder
  • 1/4 tbsp. maple syrup
  • A pinch of coarse salt
  • 0.5 cup chia seeds
  • 1 tsp vanilla extract
  • Fresh berries, for serving

Preparation:

  1. Combine milk, chocolate, cocoa powder, maple syrup, and salt in a medium saucepan. Cook over medium heat, stirring constantly, until the chocolate is melted and the cocoa is dissolved, 6-8 minutes.
  2. Pour the mixture into a medium bowl. Add the chia seeds and vanilla extract. Let sit, stirring occasionally, until the pudding cools to room temperature, about 1 hour. Cover and refrigerate overnight to allow the chia seeds to plump up and the pudding to thicken. Serve with fresh berries.
