Cucumber and melon coolers topcook.tomathouse.com
Ingredients:
- 1/4 Honeydew melon, rind, seeded and cut into pieces (about 2 cups)
- Half a seedless cucumber, chopped, plus cucumber sticks for serving
- 1/4 cup sugar
- 2 tablespoons freshly squeezed lemon juice
- 1 cup of vodka
- 1/4 cup green melon liqueur (such as Midori)
Preparation:
- Combine the melon, cucumber, sugar, lemon juice, and 1 cup of water in a blender and blend until smooth. Strain through a fine-mesh sieve into a pitcher, pressing down on the solid mixture.
- Add the vodka and liqueur to the pitcher and stir. Refrigerate until completely chilled, at least 30 minutes and up to 4 hours. Pour the cocktail into glasses filled with ice; garnish with cucumber sticks.
