Ingredients:
- 2 cups premium flour
- 0.5 tsp baking powder
- 1/4 teaspoon salt
- 110 g unsalted butter at room temperature
- 1/3 cup granulated sugar
- 1 large egg
- 1/4 cup honey
- 1 tsp vanilla extract
- Decorative sugar and/or nonpareils for garnish (optional)
Preparation:
- Position racks in the upper and lower thirds of the oven and preheat oven to 350°F (175°C).
- In a medium bowl, combine the flour, baking powder, and salt. In a large bowl, beat the butter and sugar with a mixer on medium speed until light and fluffy, about 5 minutes. Add the egg, honey, and vanilla extract and beat until fully incorporated. Reduce mixer speed to low; add the flour mixture and knead until the dough is smooth (it will be soft).
- Fill a cookie press with dough according to the manufacturer's instructions; pipe cookies onto 2 ungreased baking sheets, spacing them about 4 cm apart.
- Sprinkle with decorative sugar and/or nonpareils. Bake, rotating the baking sheets halfway through, until golden brown, 12-15 minutes. Let cool on the baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
