Crispy donuts with strawberry sauce topcook.tomathouse.com
Ingredients:
Donuts
- 1 and 3/4 cups premium flour
- 1 teaspoon baking powder
- 1/4 teaspoon coarse salt
- 1 cup whole milk at room temperature
- 4 tbsp melted butter
- 2 large eggs at room temperature
- 1 tbsp. granulated sugar
- 1 tsp vanilla extract
- Rapeseed oil for deep frying
- Powdered sugar for sprinkling
- Strawberry sauce for serving, see recipe below
- Chocolate hazelnut spread, warmed, for serving
Strawberry sauce
- 4 cups strawberries, hulled and halved
- 0.5 cup granulated sugar
- 2 teaspoons lemon juice
Preparation:
- In a medium bowl, combine the flour, baking powder, and salt. In a larger bowl, combine the milk, melted butter, eggs, granulated sugar, and vanilla. Add the dry ingredients and knead until the dough comes together (there will be a few lumps—that's okay).
- Pour 2 inches of oil into a large frying pan. Attach a deep-fry thermometer to the side and heat over medium-high heat to 375°F (190°C).
- Using an ice cream scoop (about 2 tablespoons capacity), carefully drop the batter into the hot oil and fry until golden brown, about 2 1/2 minutes, turning once and adjusting the heat to maintain the oil temperature.
- Transfer the donuts to a clean wire rack set over a rimmed baking sheet to drain any excess oil. Let cool slightly, then dust with powdered sugar. Serve the donuts drizzled with strawberry sauce and with chocolate-hazelnut spread for dipping.
Strawberry sauce: Yield: 2 tbsp.
Combine the strawberries, sugar, and lemon juice in a medium saucepan. Bring to a boil over medium heat, then reduce the heat and simmer, stirring occasionally, until the berries are softened, about 10 minutes. Place the mixture in a blender and blend until smooth. Let cool completely, about 30 minutes.
