Mashed potatoes with mustard and herbs

Ingredients:

  • 1 kg of potatoes, unpeeled
  • 1 cup whole milk
  • 110 g unsalted butter
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons grainy Dijon mustard

Preparation:

  1. Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  2. Peel the potatoes and return them to the pan (if desired, press them through a potato masher or vegetable grinder). Mash the potatoes with the milk and butter using a fork or potato masher. Add the parsley, mustard, 2 teaspoons of salt, and a pinch of freshly ground black pepper.
