Ingredients:
- 90 g of cream cheese
- 0.5 cup mayonnaise
- 1/4 cup crumbled strong-flavored blue cheese, such as Maytag Blue
- 2 stalks celery, finely chopped (about 1 cup), plus celery sticks for serving
- 1 tbsp unsalted butter
- 48 cocktail sausages
- 1/4 cup hot pepper sauce + extra for drizzling, such as Frank's
- 24 mini potato buns
- 1/4 cup finely chopped red onion
- 1 cup blue potato chips, crumbled by hand
Preparation:
- Combine the cream cheese, mayonnaise, and blue cheese in a small saucepan. Cook over medium heat until smooth, stirring frequently, about 3 minutes. Set aside and let cool slightly, about 5 minutes, then add the celery.
- In a large skillet over medium heat, melt the butter. Add the sausages and cook until heated through, stirring occasionally, for 5 minutes. Add the hot sauce and cook until the sausages are coated, 1-2 minutes. Split each mini bun vertically about halfway down the bun to resemble a hot dog bun, and place 2 Buffalo sausages in each. Top with 1-2 tablespoons of blue cheese sauce, a splash of hot sauce (to taste), some red onion, and crushed blue chips.
- Serve sandwiches with blue cheese sauce and celery sticks for dipping.
