Ingredients:
Burrito
- 450 g uncooked pork breakfast sausages, casings removed
- 10 eggs
- 1/4 cup cream 10%
- 1 teaspoon seasoned salt, such as Lawry's
- Ground black pepper
- 12 wheat tortillas
Additional side dishes
- Grated Monterey Jack cheese
- Pickled jalapenos
- Hot sauce
Potatoes for breakfast
- 12 potatoes
- Rapeseed oil for frying
- Butter for frying
- 1 large onion, finely diced
- 1 green bell pepper, finely diced
- 1 red bell pepper, finely diced
- 1 yellow bell pepper, finely diced
Preparation:
- In a skillet over medium heat, brown the sausage. Drain the fat and reduce the heat to low.
- Crack the eggs into a bowl. Add the cream, salt, and pepper, and whisk to lightly break the eggs. Pour the egg mixture over the sausage in the pan. Then, using a spoon or spatula, carefully stir. Continue to cook gently over low heat until the eggs are set. Taste and add more salt and pepper if needed.
- Microwave a stack of tortillas on a paper towel for about 30 seconds. Place a heaping spoonful of the egg mixture in the center of a warm tortilla and top with a spoonful of potatoes. Fold the sides in and roll the burrito up, enclosing the filling. Wrap in foil and keep warm until ready to serve. If desired, top the burrito with shredded cheese, pickled jalapeños, and/or hot sauce.
- Potatoes for breakfast:
Preheat oven to 375°F (190°C). Place the potatoes on a baking sheet and bake until tender, about 45 minutes. Transfer the hot potatoes to a cutting board and cut into 2-cm cubes.
- Heat a frying pan over medium-low heat. Pour 1 tablespoon of vegetable oil into the pan. Add a little butter and the onion and fry until it begins to caramelize. Then add the baked potato and bell pepper. Season the vegetables with salt and pepper. Stir. Fry, without stirring, for 5-7 minutes. You need to make sure the pan is hot enough for the potatoes to become crispy. Add more butter to the pan if the potatoes look dry. After a few minutes, use a spatula to flip the potatoes and fry the other side for another 5-7 minutes.
