Cheddar and Cider Fondue topcook.tomathouse.com
Ingredients:
- 1 bottle (0.33 l) of alcoholic cider
- 3/4 cup chicken broth, homemade or store-bought, lightly salted
- 2 tablespoons Worcestershire sauce
- 1 clove garlic, finely chopped
- 200 g of grated Gruyere
- 200 g sharp yellow cheddar
- 3 tablespoons cornstarch
- 1/8 - 1/4 tsp cayenne pepper
- 1 tbsp bourbon, whiskey, or applejack (optional)
Fondue appetizers
- Grilled chicken sausages, chorizo, or mini sausages; slices of baguette or brown bread, radishes, baked shallots, baked mushrooms, baby potatoes, pears, apples, or pretzels
Preparation:
- Combine cider, broth, Worcestershire sauce and garlic in a medium saucepan and cook over medium heat for 5 minutes.
- Combine the cheeses in a medium bowl. Sift the cornstarch over the cheese and toss gently to coat.
- Using a wooden spoon, spoon a small amount of the cheese mixture into the hot liquid and continue to stir in the cheese little by little until all the cheese has been added and the fondue is smooth and uniform, about 15 minutes. Add the cayenne pepper, salt, and bourbon, if using.
- Pour the mixture into a fondue pot and serve with any appetizers of your choice.
