topcook.tomathouse.com

Ingredients:

  • 1 cup quick-cooking oats
  • 3/4 cup whole wheat flour
  • 1/4 cup toasted wheat germ
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 0.5 cups honey
  • 1/3 cup unsweetened applesauce
  • 1/4 cup canola oil
  • 1 egg, beaten
  • 1 egg white
  • 3/4 cup chopped dried cherries
  • 0.5 cup finely chopped walnuts
  • Cooking spray
  • 1/4 cup apricot jam

Preparation:

  1. Preheat oven to 175°C.
  2. In a medium bowl, combine the oats, flour, wheat germ, cinnamon, and salt. In another bowl, combine the honey, applesauce, oil, egg, and egg white. Stir into the oat mixture. Add the dried cherries and walnuts.
  3. Spray an 8-inch (20 cm) square pan with cooking spray. Pour the mixture into the prepared pan and bake until a toothpick inserted into the center comes out clean, 30–35 minutes. Place the jam in a small saucepan and bring to a simmer. Once removed from the oven, brush the bars with the jam. Let cool completely and cut into 12 bars, approximately 4 x 1.5 inches (10 x 3.5 cm).
