Ingredients:
Spice mix
- 3 tablespoons of sugar
- 1.5 tsp paprika
- 1.5 tsp chopped fresh thyme
- 3/4 tsp ground mustard
- 1/4 tsp ground cinnamon
Nuts
- Vegetable oil to grease the pan
- Protein of 1 large egg
- 1 cup unsalted raw cashews
- 1 cup unsalted raw peanuts
- 1 cup unsalted raw pecans
- 1 cup unsalted raw walnuts
- 1 cup dried cranberries
Preparation:
- Preheat oven to 175°C, lightly grease a baking sheet with vegetable oil.
- In a small bowl, combine the sugar, paprika, thyme, mustard, cinnamon, 1.5 teaspoons of salt, and 1/4 teaspoon of black pepper and set aside. Place the egg white in a large bowl and whisk until foamy. Add the cashews, peanuts, pecans, and walnuts and stir to coat. Add the spice mixture and stir again to coat.
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet, then stir in the cranberries and transfer to a large bowl.
