Ingredients:
- 2.5 cups unsweetened almond milk or unsweetened coconut milk drink
- 3 tablespoons light agave nectar
- 0.5 cup chia seeds
- 1/4 tsp ground cinnamon
- 1 small ripe mango, cut into pieces
- 1 cup toasted coconut flakes
Preparation:
- In a medium bowl, combine almond milk, agave nectar, chia seeds, and cinnamon. Cover and refrigerate for 4 hours or overnight, stirring once to loosen the pudding after about 3 hours. Divide the pudding among ramekins and garnish with mango slices and coconut flakes.
