Ingredients:
- Unsalted butter, room temperature, for greasing the cups
- 0.5 cups of milk
- 1 bag of black tea, such as Earl Grey
- 0.5 cup granulated sugar
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon lemon juice
- 0.5 tsp natural vanilla extract
- 0.5 cups premium flour
- 1/8 tsp baking soda
- A pinch of fine salt
- Whipped cream for serving
- Ground cinnamon for serving
Preparation:
- Grease 4 microwave-safe tea cups with butter. Pour the milk into a microwave-safe bowl and microwave on high power until very hot, 1-2 minutes. Steep the tea bag in the hot milk for about 4 minutes. Remove the tea bag and whisk in the sugar, butter, egg, lemon juice, and vanilla until smooth, about 2 minutes.
- Stir in the flour, baking soda, and salt. Divide the batter among the prepared cups, filling them about two-thirds full. Microwave one portion at a time until the cake has risen and a toothpick inserted into the center comes out clean, about 2 minutes; let cool slightly. Top with whipped cream and a sprinkle of cinnamon.
