Pasta in tomato sauce with herbs and parmesan

Ingredients:

  • 450 g linguine or other long flat pasta
  • 2 tbsp tomato powder
  • 2 tsp dry Italian seasoning
  • 1 cup freshly grated Parmesan cheese, plus extra for serving
  • 8 tablespoons unsalted butter, room temperature, diced
  • Chopped fresh parsley and red pepper flakes for serving (optional)

Preparation:

  1. Bring a large pot of water to a boil and add salt. Cook the pasta according to package directions until al dente. Discard 1.5 cups of the cooking water, then drain the pasta in a colander.
  2. In a large bowl, combine tomato powder, Italian seasoning, 1/2 teaspoon salt, and 1/2 cup of the pasta water until smooth. Add the hot pasta to the bowl and toss twice to coat. Add the Parmesan and butter and continue to toss, adding a little of the pasta water if the sauce is dry. Sprinkle with Parmesan, parsley, and red pepper flakes, if using.
