Belgian Sweet Potato Waffles topcook.tomathouse.com
Ingredients:
- 1.5 cups peeled and diced sweet potato
- 2 cups premium flour
- 1 tbsp baking powder
- 0.5 tsp salt
- 6 egg whites at room temperature
- 1 cup of milk
- 1/4 cup firmly packed light brown sugar
- 1/4 cup melted butter
- 1 tbsp. l. grated orange zest
- Cooking spray to spray the waffle iron
- Special equipment: steamer basket and waffle iron
Preparation:
- Place the diced sweet potato in a steamer basket. Place the basket in a large pot of boiling water at least 5 cm from the bottom of the steamer. Cook for 20 minutes, until tender. Mash the cooked sweet potato and set aside.
- In a large bowl, combine the flour, baking powder, and salt and set aside. In another bowl, combine the sweet potato puree, milk, brown sugar, butter, and grated orange zest.
- Combine the mashed sweet potato with the flour mixture and mix thoroughly. Whisk the egg whites until stiff peaks form. Gradually fold the beaten whites into the batter, a third at a time. The batter should be thick. Drop 2 spoonfuls of batter onto a preheated, greased waffle iron and cook until the waffles are golden brown, about 5-6 minutes.
