Ingredients:
- 2 sweet potatoes
- 1/4 cup tahini
- 0.5 tsp cumin
Preparation:
- Microwave 2 sweet potatoes until tender, 10 to 12 minutes.
- Peel and puree the tahini in a food processor with 1/4 cup tahini, 2 tablespoons olive oil, the juice of half a lemon, 1 teaspoon coarse salt, 1/2 teaspoon cumin, and a pinch of cayenne pepper. Spread the purée on 4 slices of multigrain toast. Drizzle with olive oil and sprinkle with za'atar.
