Ingredients:
- 900 g of unpeeled Yukon Gold potatoes
- 1.5 cups sour cream
- 110 g unsalted butter
- 0.5 cup finely chopped fried bacon
- 1/4 cup thinly sliced fresh chives
Preparation:
- Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pan (optional, mash them after peeling). Mash the potatoes with the sour cream and butter using a fork or potato masher. Add the bacon, green onions, 2 teaspoons of salt, and freshly ground black pepper to taste.
