Caesar salad with pasta and shrimp

Ingredients:

  • 1/4 cup mayonnaise
  • 1/4 tbsp. grated parmesan
  • 1/4 cup sour cream
  • 1 tbsp. freshly squeezed lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/4 tsp finely grated garlic
  • 200 g dry penne pasta (feathers)
  • 1 tbsp. l. olive oil
  • 200 g shrimp, peeled and deveined
  • 1.5 tbsp. shredded romaine lettuce
  • 1/4 cup finely chopped celery
  • 2 medium tomatoes, diced

Preparation:

  1. In a large saucepan, bring salted water to a boil.
  2. In a large bowl, combine mayonnaise, Parmesan, sour cream, lemon juice, Worcestershire sauce, garlic, 1/2 teaspoon salt and a few grinds of black pepper.
  3. Add the pasta to boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool. Transfer to a large bowl with the dressing.
  4. In a medium skillet over medium heat, heat the oil until shimmering. Add the shrimp, 1/4 teaspoon salt, and season with pepper. Cook, stirring occasionally, until the shrimp are pink and cooked through, about 3 minutes. Transfer to a plate and set aside to cool.
  5. Add the fried shrimp, romaine lettuce, celery, and tomatoes to the bowl and toss. Season with salt and pepper to taste. The pasta salad is best served immediately.
