Hot sandwich with cheese, peanut butter and jam

Ingredients:

  • 2-3 strips of bacon, cut each into 2-3 pieces
  • Half a medium onion, halved and thinly sliced
  • 4 tablespoons peanut butter
  • 2 slices sourdough bread
  • 1 tbsp. l. apricot or peach jam
  • 60 g grated Manchego cheese
  • 1 slice provolone
  • 1 slice of Swiss cheese
  • 3 tablespoons mayonnaise

Preparation:

  1. Heat a nonstick skillet over medium heat. Place the bacon in the skillet and cook until crispy, about 2 minutes per side; remove to a plate. Add the onion, season with salt and pepper, and cook until golden brown, about 10 minutes. Transfer to a paper towel-lined plate to drain. Wipe the skillet dry and return to the heat.
  2. Spread peanut butter on both slices of bread, then spread jam on both slices. Place Manchego on one slice, then cut the provolone in half and place it on top of the Manchego. Cut the Swiss cheese in half and place it on top of the jam on the other slice. Place onions on top of the provolone, then add bacon bits. Stack the two sandwiches to make a sandwich.
  3. Spread half the mayonnaise on the top of the sandwich. Place the sandwich, mayonnaise side down, in the pan. Spread the remaining mayonnaise on the top bread. Fry until golden brown and the cheese in the center is melted, 3-4 minutes per side. Cut the sandwich in half and serve.
