French fries in cheese sauce

Preparation:

Bake 4 cups of fancy french fries according to package directions. Meanwhile, make the cheese sauce: melt 110 g of butter in a skillet over medium-high heat.

Add 1/4 cup flour and cook for 2 minutes, stirring until smooth. Gradually add 1 cup milk and a pinch of nutmeg, mix thoroughly, and cook for 3 minutes.

Add 8 oz (230 g) of cubed processed cream cheese and cook, stirring, for 5 minutes, until melted. Add 1/4 cup of light beer or chicken broth, 1 tsp. hot sauce and 1/2 teaspoon coarse salt. Add the fries to the sauce and stir.
