Peanut Butter and Jam Pie

Ingredients:

    Pie

  • 165g (12 tbsp) unsalted butter, room temperature, plus extra for greasing the pan
  • 2.5 cups premium flour
  • 1 teaspoon baking powder
  • 0.5 tsp of soda
  • 1.5 cups firmly packed light brown sugar
  • 2/3 cup creamy peanut butter
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 tsp fine salt
  • 3/4 cup milk
  • 3/4 cup raspberry, strawberry or grape jam

    Streusel

  • 3/4 cup premium flour
  • 2/3 cup firmly packed light brown sugar
  • 2/3 cup coarsely chopped honey-glazed peanuts
  • 1/4 teaspoon fine salt
  • 4 tbsp unsalted butter, softened
  • Powdered sugar, for serving

Preparation:

  1. Position the oven rack in the middle position and preheat the oven to 350°F (175°C). Grease a 9 x 13-inch baking dish.
  2. Pie:

    In a large bowl, combine the flour, baking powder, salt, and baking soda. In another large bowl, beat the brown sugar, butter, and peanut butter with a mixer on medium-high speed until the mixture is light and smooth, about 5 minutes. Scrape down the sides of the bowl as needed. Add the eggs, one at a time, beating well after each addition. Continue beating until smooth, about 2 minutes. Add the vanilla extract.
  3. Reduce mixer speed to medium-low and add flour in three additions, alternating with two additions of milk, beginning and ending with flour. Knead until smooth.
  4. Place the dough into the prepared baking pan. Spoon the jam on top and stir with the back of a spoon.
  5. Streusel:

    Combine flour, brown sugar, peanuts, and salt in a small bowl. Add the butter and mix thoroughly with your fingers or a fork until evenly distributed and incorporated into the flour mixture. Sprinkle the dough with streusel.
  6. Bake until golden brown and a toothpick inserted into the center comes out clean, 50-60 minutes. Cool in the pan on a wire rack. Dust with powdered sugar, slice, and serve.
