Spelt salad with pear and celery

Ingredients:

  • 1 cup spelt
  • 2 pears
  • 2 stalks of celery
  • 0.5 cup parsley
  • 0.5 tbsp. grated parmesan
  • 3 tablespoons of apple cider vinegar

Preparation:

  1. Cook 1 cup of spelt according to package directions. Drain thoroughly and transfer to a large bowl to cool.
  2. Toss with 2 sliced ​​pears, 2 thinly sliced ​​celery stalks, 1/2 cup each of parsley and grated Parmesan, 3 tablespoons each of olive oil and apple cider vinegar. Season with salt and pepper to taste.
