Kids Can Make: Puffed Rice Balls

Ingredients:

  • 2 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 teaspoon light agave syrup
  • 4 cups puffed rice
  • 1/4 cup diced dried apricots (about 60 g)
  • 2 tbsp. flax seeds, ground
  • 2 tbsp. roasted peeled sunflower seeds, unsalted

Preparation:

  1. Spray a large metal bowl with cooking spray and set aside.
  2. In a medium saucepan, combine the marshmallows, butter, agave syrup, and 1/4 teaspoon salt. Heat over medium heat, stirring frequently, until the marshmallows are completely melted, about 3 minutes. Remove from heat, add the puffed rice, and stir to coat.
  3. Transfer the rice mixture to the prepared bowl and sprinkle with dried apricots, flax seeds, and sunflower seeds. Mix with a wooden spoon or your hands, lightly sprayed with cooking spray. Form into 8 balls (about 0.5 cups each).
  4. Let set for about 30 minutes, then wrap tightly in parchment paper or plastic wrap.
