Pasta salad with garlic, salami and broccoli topcook.tomathouse.com
Ingredients:
- 1/3 cup olive oil
- 3 cloves garlic, thinly sliced
- A pinch of red pepper flakes
- 1 tbsp. freshly squeezed lemon juice
- 2 cups bite-sized broccoli florets
- 220 g of dry radiator paste
- 110 g thick slices of salami, cut into thin strips
- 1/4 cup thinly sliced green onions
Preparation:
- In a medium skillet, heat 1/3 cup olive oil over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 3 minutes.
- Transfer to a large bowl and cool to room temperature. Add lemon juice and sprinkle with 0.5 teaspoon of salt and a pinch of freshly ground black pepper.
- Meanwhile, bring a large saucepan of salted water to a boil.
- Cook the broccoli in boiling water until crisp-tender, about 3 minutes. Using a slotted spoon, transfer the broccoli to a colander and rinse under cold water to stop the cooking process. Add the broccoli to the bowl with garlic butter.
- Add the pasta to boiling water and cook according to package directions. Drain and rinse the pasta under cold water to cool; add to a bowl.
- Add the salami and green onions to the bowl and toss. Season with salt and pepper. The pasta salad is best served immediately.
