Ingredients:
- 1 cup lemon sorbet, softened
- 3/4 cup sweetened condensed milk
- 1/3 cup lemon-flavored vodka
- 2/3 cup heavy cream
- 1 graham cracker pie crust (22 cm)
- Sweet whipped cream, for garnish
- 2 marmalade lemon wedges, quartered, for garnish
Preparation:
- In a medium bowl, combine the sorbet, condensed milk, and vodka. Mix with a mixer on low speed until the frozen sorbet is smooth and free of lumps, 1-2 minutes.
- Pour the whipped cream into another medium bowl and beat with an electric mixer until soft peaks form, 1-2 minutes. Fold the whipped cream into the lemon sorbet mixture and spoon it over the cake. Freeze until completely set, about 4 hours or overnight.
- Serve garnishing each slice of pie with whipped cream and a quartered lemon wedge.
