Ingredients:
- 3 strips bacon, cut in half
- 1 ripe avocado, halved and diced
- 2 ripe tomatoes, diced
- 2 hard-boiled eggs, chopped
- 8 cups mesclun salad greens
- 2 cups shredded cooked chicken
- 1/2 cup homemade blue cheese dressing, recipe below
Blue cheese dressing
- 1 cup mayonnaise
- 0.5 cup crumbled blue cheese (about 80 g)
- 0.5 cups low-fat cream (10%)
- 2 tbsp sour cream
- 1 tbsp. freshly squeezed lemon juice
- 1/4 tsp Worcestershire sauce
Preparation:
Cobb Salad Place the bacon on a paper towel on a microwave-safe plate. Cover with another paper towel and microwave on high power until crispy, 3-4 minutes. Let cool.
- Meanwhile, in a large salad bowl, layer the avocado, tomato, and eggs, seasoning them with salt and black pepper. Top with the salad greens, then top with the chicken pieces. Crumble the bacon over the salad. Serve the salad and toss with the dressing until evenly distributed. Serve.
Blue Cheese Dressing: In a medium bowl, combine the mayonnaise, 1/4 cup blue cheese, heavy cream, sour cream, lemon juice, Worcestershire sauce, and 1/2 teaspoon salt until smooth. Gently fold in the remaining 1/4 cup blue cheese and season with pepper to taste. Use the dressing immediately or refrigerate for up to 3 days.
