Grilled Tomato Salsa topcook.tomathouse.com
Ingredients:
- 6 plum tomatoes, cored and halved lengthwise
- 4 cloves garlic, unpeeled
- 1 serrano pepper, cut in half
- 1 shallot, peeled and halved
- Half a small onion, peeled and quartered
- 2 tablespoons extra-virgin olive oil
- 2 tbsp coarsely chopped fresh cilantro
Preparation:
- Preheat the grill to medium-high heat. Place the tomatoes, garlic, chili, shallots, and onions, cut-side up, on a baking sheet. Drizzle the vegetables with olive oil and season with salt and black pepper.
- Transfer the vegetables to the grill and grill, turning occasionally, until charred, 8-10 minutes. Let the vegetables cool slightly. Peel the garlic and peel the tomatoes.
- Transfer the vegetables to a food processor, add the cilantro, and process until the sauce is finely chopped. Season with salt and pepper to taste. Serve immediately.
