Grilled Tomato Salsa

Ingredients:

  • 6 plum tomatoes, cored and halved lengthwise
  • 4 cloves garlic, unpeeled
  • 1 serrano pepper, cut in half
  • 1 shallot, peeled and halved
  • Half a small onion, peeled and quartered
  • 2 tablespoons extra-virgin olive oil
  • 2 tbsp coarsely chopped fresh cilantro

Preparation:

  1. Preheat the grill to medium-high heat. Place the tomatoes, garlic, chili, shallots, and onions, cut-side up, on a baking sheet. Drizzle the vegetables with olive oil and season with salt and black pepper.
  2. Transfer the vegetables to the grill and grill, turning occasionally, until charred, 8-10 minutes. Let the vegetables cool slightly. Peel the garlic and peel the tomatoes.
  3. Transfer the vegetables to a food processor, add the cilantro, and process until the sauce is finely chopped. Season with salt and pepper to taste. Serve immediately.
